Katsouli Cheese Factory - Koliaki Argolida
Gidotiri, a traditional Greek cheese with a rich taste and nutritional value, is produced with passion and dedication at the Katsouli Cheese Factory, located in the beautiful village of Koliaki Trachia in Argolis. Since 1989, the Katsouli family continues to offer high-quality cheese products, keeping alive the cheese-making tradition of the region.
Production process
Yidotiri Katsouli is made from fresh local goat's milk, which is collected daily from selected producers in the area. The production process strictly follows traditional methods, combining the experience and know-how of cheesemakers with modern technologies and hygiene standards.
First, the milk is heated and natural rennet is added to coagulate it. After it has set, the curd is cut into small pieces and allowed to drain, expelling the whey. The cheese is then placed in special molds and pressed to obtain its solid texture. The ripening process lasts at least five months in controlled conditions of temperature and humidity, in order to develop the rich taste and characteristic aroma of goat cheese.
