Katsouli Cheese Factory - Koliaki Argolida
Feta, the famous Greek cheese with its characteristic salty and spicy taste, is produced with love and dedication at the Katsouli Cheese Factory, in the village of Koliaki Trachia in Argolis. Founded in 1989 by Vassilis Katsoulis, the dairy has been recognized as one of the top cheese dairy destinations in Greece, thanks to the high quality and authenticity of its products.
Production process
Katsouli feta is made exclusively from fresh local goat and sheep milk, which is collected daily from selected producers in the area. The production process strictly follows traditional methods, combined with modern technologies and hygiene standards, ensuring the excellent quality of the final product.
The milk is coagulated using natural rennet and after careful ripening, the feta gets its characteristic texture and taste. The ripening period lasts at least two months, during which the cheese acquires its rich, spicy flavor and soft, creamy texture that make it stand out.
