Mastichoto, a small-production cheese with a special consistency and texture, is produced with love and dedication at the Katsouli Cheese Factory, located in the beautiful village of Koliaki Trachia in Argolis. The cheese factory, founded in 1989 by Vassilis Katsoulis, continues to offer high-quality cheese products, keeping alive the cheese-making tradition of the region.

Production process
Katsouli chewing gum is made exclusively from fresh local goat and sheep milk, which is collected daily from selected producers in the area. The production process strictly follows traditional methods combined with modern technologies and hygiene standards.

First, the milk is heated and natural rennet is added to coagulate it. After it has set, the curd is cut into small pieces and reheated to expel the serum. The cheese is then reheated, acquiring the characteristic chewy texture that makes it stand out.
